FOG Control Program

Santa Maria, CA – The City of Santa Maria has approximately 175 food service establishments (FSEs) in its sanitary sewer service area and has identified fats, oils, and grease (FOG) from these FSEs as a problem for its sanitary sewer system. Wallace Group was hired to develop the City’s FOG Control Program, which consisted of permitting the FSEs, inspecting the FSEs semiannually, and conducting program outreach, in FY 2008/2009. The City internally managed and implemented the FOG Control Program from July 2009 to December 2012, and the City contracted with Wallace Group again to implement and manage the City’s FOG Control Program in 2013. Due to the cooperative effort between Wallace Group inspectors and City staff the City has seen a reduction in Sanitary Sewer Overflows (SSOs).
